
What do you do when you’re craving a really special glass of wine, but your dinner partner isn’t drinking or just doesn’t love wine the way you do?
That was the challenge that inspired Greg Lambrecht, a medical device inventor and wine enthusiast, to create the Coravin.
“The initial concept began out of necessity. My wife became pregnant and stopped drinking. I still wanted to enjoy great glasses of wine, but didn’t want to commit to whole bottles. I tried preservation systems, but found I still wasn’t able to drink what I wanted, when I wanted, without sacrifice. Each time, once the cork was pulled, oxidation started and I was locked into that bottle.
My dream was to magically pour wine from bottles without ever pulling the cork. The remaining wine could then go back in my cellar, so that I could enjoy it again, whenever I desired.”
Many people would have dismissed that as a pipe dream, but Greg set about making it come true.

But here’s all you really need to know… Air (well the oxygen in air if we’re going to be precise) is DEATH to the tannins in wine. It causes them to oxidize, which causes them to taste FLAT. And that isn’t a desirable thing to happen to a great bottle of wine.
The Coravin keeps that from happening.
Right, the Coravin uses basically the same approach to keeping air from touching the wine that scientists use to drilling into water when they don’t want to contaminate the water. And it doesn’t allow one tiny bit of oxygen into that precious bottle of wine!
Reviews of the Coravin on Mashable and Gizmodo have been glowing, and even world renowned wine expert Robert Parker has called Coravin “the most transformational and exciting new product for wine lovers that has been developed or invented in the last 30-plus years.”
So why are we telling you all that?
You guessed it. The Coravin has come home to Harvest!
As far as we know, Harvest is the first St. Louis restaurant to employ this cutting edge (pun intended!) technology to make wines previously only served by the bottle available one glass at a time.
“With our huge list of exquisite wines it really just makes sense,” is Chef Nick’s take on his decision to purchase the Coravin. “We know that if not everyone at the table really enjoys a fine glass of wine, it makes it almost impossible to justify ordering it. We’ll always let our customers ‘cork and carry’ but if you aren’t going to finish that bottle in the next day or so even recorking won’t protect your wine. This makes it possible for us to satisfy the most discerning wine lover one glass at a time. Which is really exciting for us because our goal is always to give the customer exactly what they want and have it taste the absolute best it can taste.”
S0 if there is a wine on our wine menu you’ve always wanted to try, but couldn’t get anyone to share it with you, let us know. Not all of our wines will be offered by the glass even with the Coravin’s help, but we’ll try to accommodate you if we can.
